Vegan Coconut cake
1/4 cup vegan margarine
3/4 cup organic brawn sugar or 3 tsp Stevia
2 tsp coconut oil
1 tsp vanila
1 tsp organic white vinegar
1 cup fresh coconut milk

1 1/2 cup all purpose flour
1/2 tsp salt
2 tsp baking powder
1/4 cup coconut flakes or 1 1 /2 cup fresh coconut white yoke
mix wet and dry bakes 250 to 350 in 30 min

PASTA with tomato sauce (cooked by fresh tomato)
Ingredients : Pasta, 3 Tomato, Onion, Choy sum, cili, Olive oil and sea salt
Preparation: tomato cut in piece, cut Onion and green Vegi
Instruction : Cook Pasta in Boiling water, heat cooking oil on high heat in another frying pan, fry onion and add in tomato cook until soft, then add Pasta and stir until cook, add salt, Stevia and liquid amino for taste.

Vegan salad, Vegan Cashew Cheese and sandwich
Yummy Salad
Any fresh vegetable, apple, sunflower seed, pumpkin seed, sesame, raisin, salad dressing (vegan mayonnaise and yellow mustard)
Vegan Cheese Sandwich
2 slice of Vegan Cashew Cheese
2 slice fresh tomato
Vegan mayonnaise and Whole wheat bread
Vegan Cheese mix with Brown Rice
Vegan Cashew Cheese, fresh tomato cut in small piece, fresh corn and cooked brown rice, mix all together add Olive Oil and salt for taste.

Potato Mash 马铃薯泥
Ing: Potato, Soya Spread or Soya Butter, Salt, Soya Milk, Green Onion, Pepper and Nutmeg
材料:马铃薯,大豆黄油,豆奶,海盐,青葱,胡椒粉,Nutmeg粉
Bring a big pot of water add salt, potato washed and cut in piece to cook for 25min or until done - a fork can easily be poked through them.
Drain water from potatoes. Put hot potatoes into a bowl. Add Butter and Soya milk, pepper, salt and Nutmeg for taste. Use potato masher to mash potatoes until well mashed. Use a strong spoon to beat further, adding milk to achieve the consistency you desire.

Chinese Spanish Soup with Mushroom Nest 西式 园菜+金针菇汤
汤底材料1:Chinese Spanish 园菜(任何青色蔬菜),Corn 玉米 ,wolfberry 枸子,Chinese Dates 红枣,Vegatable Broth 蔬菜精块,
材料2:Mushroom 金针菇,Oliver Oil 橄榄油,Salt 调味料
材料3:80mil Sunflower Oil 太阳花籽油,200mil Soya Milk 豆奶,1 1/2tsp 有机醋 Vinegar
作法1:两大碗水煮沸,把玉米切块和其他材料(除了青菜 )一起加入,煮20分钟最后加入青菜,煮熟后把玉米拿起 ,汤倒进搅拌机搅就可盛上盘,(玉米做配菜吃就可)。

Peanut Butter Cakes Recipe
My Ingredients:
1 cup Organic whole wheat flour
1 cup Organic all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup creamy peanut butter
1 cup Soya milk
1/2 cup Grape Seed oil
1/2 cup Stevia water (The natural sweetner) ( If you have powder just cook with water )
2 tablespoon fresh lemon juice
1 cup Organic all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup creamy peanut butter
1 cup Soya milk
1/2 cup Grape Seed oil
1/2 cup Stevia water (The natural sweetner) ( If you have powder just cook with water )
2 tablespoon fresh lemon juice
Directions:
Preheat oven to 350 degrees F.
In a large bowl, whisk together whole wheat flour, all purpose flour, baking powder, baking soda, and salt.
In a separate bowl, use an electric mixer to mix together creamy peanut butter, Soya milk, Grape seed oil, Stevia cook with water and add in, and lemon juice.
Gradually mix dry ingredients into wet ingredients until well combined.
Bake for 15 – 18 minutes. When a toothpick can be inserted into the center of a cupcake and removed with few to no crumbs, they are done.

红酒蘑菇忌廉 (德国料理)Red Wine Mushroom cream soup (Germany)
材料:新鲜蘑菇 (Mushroom),红酒(Red Wine),忌廉(European Cooking Cream) ,蘑菇蔬菜精块(Mushroom veggie stock cube),海盐(Sea Salt),蒜头(Garlic),大葱头(Onions),橄榄油(Olive oil)
作法:热油镬炒香切碎的蒜米和葱头,然后加入切片的蘑菇炒至半熟,加红酒刚好盖过蘑菇,再加入精块盖起来焖,打开后加入忌廉,海盐调味就可。
Method: Heat the olive oil in pan, add garlic and onions to fry till golden, add mushroom and fry for couple of mins until softened and golden. Pour in the wine and stock cube, cover up to cook for few mins, stir in the cream and season, Bring to the boil, then done.

小米烤蕃茄
材料:2碗小米,3粒蕃茄,3粒大辣椒,1粒大葱头和蒜头,2粒八角,1支Kayu Manis,姜粉,胡椒粒,香料,海盐,橄榄油,
作法:先把小米洗干净在电饭锅煮熟,电炉先100度加热,把蕃茄头部切洞取出内部和大辣椒切半一旁备用,切碎大葱头和蒜头,起镬加入橄榄油,加入八角和kayu Manis爆香,再一起把大葱头和蒜头炒香,然后加入小米饭,再把香料,海盐和姜粉加入搅均匀就可息火,把小米饭填满蕃茄盖上,进入电炉前淋点橄榄油在上面,250度直到蕃茄熟透就可,大概是5分钟。
这个料理是我在捷克看到很多未试过的香料所启发的灵感,香料在欧洲人的烹饪里是很普遍,我也不知这种香料中文是叫什么来头,但以捷克名字做了记录Majoranrw (Majoran),至于姜粉也有两种不同,一种是普遍的老姜粉,一种类似沙姜的姜粉,本人喜欢沙姜的味道,所以就各一匙加入,出来的效果是有点像马来西亚印度式的饭香,却因为有这种不同的香料所以又不像印度饭,哈哈!配合甜味的蕃茄口感非常可口,大辣椒就有点普通了,大辣椒建议配搭一点甜辣酱淋上会更可口,蕃茄就无需再配搭任何的酱料了。

蕃茄和茄子沙拉,小豆烩马铃薯
材料:1支茄子(Eggplant),蕃茄,香料,海盐,橄榄油
作法:把茄子和蕃茄切丁,将茄子蒸熟或者烫熟,加入橄榄油和香料,海盐调味就可。
材料:土耳其橙黄色小豆,3粒马铃薯,大葱头和蒜头,辛辣香料(随意)
作法:橄榄油炒香辛辣的香料粒,加入大葱头和蒜头炒至香,再加入切斜片的马铃薯煮熟,然后加水和橙黄色的小豆烩至软为止。
非常可口又营养的前菜和香味十足的奥式菜肴是位奥大利的沙发客朋友Silvia准备给我们的晚餐,好吃!当天一整天都在外游览,回到家有这么特色美味的菜肴等着我们,实在是太感动,感恩!
